Recipe- Benne Wafers and Pimento Cheese

A classic southern recipe loved and made for ages, Benne wafers with pimento cheese is a true go-to dish in southern culture. Here we have a recipe for both the wafers and cheese, and ways to make this dish perfectly yourself for a guest-favorite in your own home.

Benne Wafers- what you’ll need:

½ cup of sesame seeds

1 cup of flour

½ teaspoon of baking powder

½ teaspoon of salt

¼ cup of butter

5 tablespoons of milk

1 beaten egg

Combining:

Toast the sesame seeds on a baking sheet for around 5 minutes at 350 degrees, then let it cool.

Mix flour, baking powder and salt in a food processor or blender. Add cut chunks of butter and combine.

Add milk in slowly 1 tablespoon at a time, add in sesame seeds just to combine, don’t pulverize them fully.

Roll dough into a cylinder and wrap in waxed paper, chill until firm for about one hour or overnight.

When cold, slice the dough into rolls up to ¼-inch thick. Place them on a baking sheet lined with parchment paper. Brush them with the beaten egg. Bake at 350 degrees until golden, about 12-15 minutes depending on the thickness and oven.

Pimento Cheese- what you’ll need:

½ cup of mayonnaise

2 cups of grated cheddar cheese

¼ teaspoon of cayenne pepper

Black pepper and salt to taste

½ teaspoon of garlic powder

Tabasco to taste

4 ounces of drained pimentos

Combining:

Mix cheese and mayo together in a food processor or blender. Place the mixture into a bowl and stir in the remaining ingredients.
